Avocado Egg Salad Toast

Ingredients 

  • 8 large hard-boiled eggs, coarsely chopped
  • 1 medium ripe avocado, slightly mashed
  • 2 Tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1/2 cup chopped celery
  • 4 slices of whole-grain bread, toasted

Directions 

  1. Combine eggs, avocado, lemon juice, celery and salt in a medium bowl; mix well.
  2. Spread 1/4 of egg mixture onto each slice of toast.
