Avocado Egg Salad Toast
- 8 large hard-boiled eggs, coarsely chopped
- 1 medium ripe avocado, slightly mashed
- 2 Tbsp fresh lemon juice
- 1/2 tsp salt
- 1/2 cup chopped celery
- 4 slices of whole-grain bread, toasted
- Combine eggs, avocado, lemon juice, celery and salt in a medium bowl; mix well.
- Spread 1/4 of egg mixture onto each slice of toast.
